In the first photo you are nearing the end of rnd 2.  You have worked the Sc of you stitch combination and need to work the last Dc.  You work this stitch in the same stitch as your begin Ch-1 and then Sl St to end the round.  Working in this way keeps your Sc in top of the previous rows Dc and vice a vesa.
Now for some color changing basics.  In the Penguin pattern I have just finished (Sc next dc, dc next st) 8 times and will now be changing from my White to my Burgundy.  The last st to be worked in my () repeat is a Dc.  I work the stitch in White until I have 2 loops left on the hook.  I drop the White, pick up my Burgundy and finish the stitch.
